Thai Peanut Chicken w/ Jasmine Rice

I love cooking from scratch as much as anyone, but, sometimes, that’s just not realistic. Occasionally when I get home from work, I want to smack my easy button and have dinner be ready quickly. Such was the case last evening. I had precooked chicken in the refrigerator just waiting to be partnered up with a style of cuisine. On the way home, I remembered that I had Thai peanut sauce and jasmine rice-a new product that I purchased but hadn’t tried yet. I first put a teaspoon or so of sesame oil in the pan and added the rice to let it get browned-i did not follow the instructions on the rice package first. Next, I cut up the chicken and added it. While that was cooking on medium-low, I steamed broccoli. Then, I scooted the rice and chicken to the side and added an egg to the middle and scrambled it. I added the steamed broccoli and by then, the rice and chicken were nice and browned so I added half the bottle of Thai peanut sauce and mixed it in gently for a minute or so. And, all that was left to do was ring that dinner bell and add a squirt of sriracha if you like it spicy. Sky Valley has a couple different types of sauce that I really like and the minute rice was easy and I will buy it again. I would love to know what you think if you try this.
