Cool Whip Cookies

I saw and started using this recipe several years ago. It is one of those recipes that you can mix and match and change to your liking each time. It takes 1 box of cake mix, 1 egg and 1 container of cool whip. Mix together, make into balls, roll in powdered sugar and bake at 350 for approximately 15 minutes. Keep an eye on them until you know the sweet spot for your oven. The photos are from our batch of strawberry cookies. Though there are so many varieties you could make, I recommend some of the following: lemon, chocolate, chocolate peanut butter-add a cup of peanut butter to the mix, vanilla rolled in sprinkles, vanilla cake mix with the extract flavor of your choice and so many more. The next time I make them, I am going to make two batches and mix them, like strawberry and lemon or chocolate and peanut butter, etc. My assistant (grandson) was helping me and he said, he was my taste tester and that he did. I love cooking with my grandkids, creating memories they will carry forever.
