Taco Ring

If I had to guess, I would say tacos are one of the most common meals for dinner. I know it is in my house because I love TACOS! I have made tacos every which way I can. I love that they are so easy and you can change the recipe up a little to give more variety and not have the same thing every time. At my granddaughter’s birthday dinner, my daughter in law made a taco ring and this was something new to me. So, on my lunch hour the next day, I got the ingredients to make my own version for dinner and it turned out great so I thought I would share. I used 1 lb of ground beef, 2 cups cheddar cheese, 2T or 1 packet of taco seasoning, 1 small onion, diced, 1 package crescent rolls1 bag lettuce mix-your choice what kind, 1 cup diced cherry tomatoes, salsa and cilantro(well, my cilantro was bad so it’s not pictured, but, I intended to use it and I don’t prefer sour cream so I did not use it but, if you like sour cream, use it as well). First, preheat the oven to 375. Then, brown the ground beef, drain and then add half the cheese, 2T water and the taco seasoning and mix. Next, take a round pizza pan or stone and open the crescents. Lay them with the sides just overlapping with the pointed edge pointing away from the pan to form a 6″-ish circle in the pan. Then, spoon the ground beef mix on the the crescents-i used an ice cream scoop and fill the circle. Next, take the pointed end and bring it over the topping and tuck it under the back side. Filling WILL be showing. Then, top with the rest of the cheese and bake for approximately 20 minutes. I believe I took mine out at 18 minutes because the cheese on top was baked to my idea of perfection. Then, let it cool for a little bit. Next, you layer the center with salad mix, tomatoes, onion, salsa, sour cream and cilantro. You could also add black olives. And, it is ready to serve. And, remember, you can change this up for variety by using shredded chicken or steak, any or all of the veggie ingredients because it is to your liking.
