Who doesn’t like cauliflower with cheese? We were at Longhorn one night for dinner and they had this great cauliflower that was creamy and cheesy and I couldn’t wait to try and replicate it. So, I took a whole head of cauliflower and steamed it in my instant pot for 1 minute. While that was cooking, I took a cup of plain Greek yogurt and 1/4 c of cheese, 1/4 cup of diced scallions and a pinch of salt. When the cauliflower is steamed, put it on a cookie sheet. I cut a few florets off the top and spooned the Greek yogurt on so it could drip down the head. I replaced the florets back on and topped it off with two slices of Cheddar cheese. I put it in the oven at 450 for 5 minutes and then turned the temperature to broil for 2 minutes (or until the Cheddar is golden brown) . Remove from the oven and slice to serve.
