Since buffalo chicken came on the food scene, I think it’s popularity has grown every year. I think I would eat anything “buffalo chicken”. I was looking for something to take to a food day at work and I saw a buffalo chicken recipe and thought, I could change that around a little and make a dip. So, I looked at the ingredients and tweaked them a little and had a great crockpot dip. Then, when I was eating the dip , I was thinking about ways that I could tweak the ingredients to make other buffalo chicken recipes. And, the best part is that it was so easy because I used a rotisserie chicken from Walmart.
Buffalo Chicken Dip: 1 rotisserie chicken taken off the bone, 2 8 oz pkg cream cheese, 1/2 c of your favorite wing sauce, 1/3 c ranch dressing and 2-ish cups of your favorite shredded cheese. To keep it authentic, use bleu cheese and if you’re not a fan of the bleu, then, use your favorite-gorgonzola or feta would be good as well. Just use what you have or your favorite. Bake in a dish in the oven on 350 for 20-25 minutes or if you want to put it in the crock pot, stir it every 15 minutes until everything is mixed well. Turn on keep warm setting if you have it or low but watch it so it doesn’t burn on the edges.
Buffalo chicken casserole I would leave the chicken on the bone but cut it up , decrease the cream cheese to 1 and mix the cream cheese, wing sauce, ranch dressing and half the cheese. I would mix that together and spread it in a 9 x 12 baking dish and lay the chicken pieces on top. Bake at 400 degrees for 10 minutes and then add the rest of the cheese to the top and broil for 5 minutes or until the top is golden brown. I would serve this with a nice crisp salad and maybe steamed cauliflower.
Buffalo chicken grilled cheese: I would use the same ingredients for the casserole, take the chicken off the bone and have a loaf of your favorite bread. Butter the outsides of 2 pieces of bread-sourdough would be a good choice, spoon the mixture onto one slice and add the top slice of bread. Turn when finished to brown and voila.
Buffalo chicken stuffed chicken: For this dish, you would need 4 chicken breasts. Cut them butterfly style and mix together 1/2 pkg cream cheese, 1/4 c wing sauce, 1/4 c ranch dressing and 1 cup of your favorite shredded cheese. Spoon this mixture on one side of the chicken and fold the top over and wrap with bacon to close them better or you can use toothpicks to close them. Bake this at 375 degrees for about 25 minutes.
Buffalo Chicken Salad: Back to the rotisserie chicken for this one. Use a whole one off the bone, cook your favorite pasta, drain and put in the bowl with the chicken, then, add 1/2 c wing sauce, 1/2 c ranch, 1 cup any shredded cheese and anything else you want to add to the salad. If you like celery, I would put it in this salad and you could even exchange the ranch dressing for bleu if you want.
