Chicken Salad

Chicken salad is like potato salad. There are a million recipes. I could eat my version of chicken salad for breakfast, lunch or dinner. And, it is so easy to put together. I like to make a batch of chicken salad on Sunday (my prep for the coming week day) to have for lunches. I also love that you can eat just the salad, you can put it on a bun, you could put it in a tortilla (i would choose a flavored one with spinach or roasted red peppers that wouldn’t add a lot of calories, or you could just use a plain one as well. Additionally, the ingredients can be limited to just a few or you could put in everything but the kitchen sink. And, I almost always use a rotisserie chicken from Wal-Mart that I find marked down to around $2.50. My favorite version would have the whole rotisserie chicken, 1/3 of a purple onion, around 25 red grapes, 2 or 3 sprigs of fresh dill, 1/4 cup homemade mayo (you can choose any kind of mayo or sometimes, I use greek yogurt), 1/4 cup sour cream, 1/2 cup diced pecans and a healthy squirt of dill mustard or any type of mustard you like. I have also used garlic mustard and stone ground mustard. Other things I would consider adding to my chicken salad are: pickles, olives, capers, scallions, boiled eggs, and you could even trade the grapes for honeycrisp apples if you wanted. This is also a good recipe to get the kids involved in.
