Stuffed Peppers

When you are looking for something different to make for dinner, you should give this variation on stuffed peppers a try. All you have to do is prep the peppers, brown the ground beef and season, add the potatoes and cheese of your choice. The potatoes are real but you could also use potato flakes as well. I started by preheating the oven to 400 degrees. Then, i cut the top off and cleaned the peppers. Next, I browned the ground beef and added approximately 1/4 cup to the bottom of the peppers. Lastly, spoon the potatoes over the ground beef and, place a slice of cheese-your choice over the top and arrange the peppers on a baking sheet. Bake for approximately 10 minutes or until the cheese is melted. Turn the temperature of the oven to broil and let that direct heat brown the freshly melted cheese.

Variation-you could add taco seasoning to the ground beef, add rice instead of potatoes, then, add tomatoes and cheese. I would serve with my choice of salsa.
