Taco Bowls

I was thinking about tacos for dinner when I was inspired to try this twist. I took 2 lbs. of ground beef, seasoned it, and took my muffin pan and turned it upside down in a larger cookie pan. Then, I formed “bowls” around the bottom of the muffin cups and baked for 25 minutes in a 400 degree oven. While this was cooking, I diced purple onion and tomatoes (whatever you like in your taco, dice that). Once these bowls were done, i turned them over and set them on the cookie pan and added onions and tomatoes and a healthy handful of cheese to each one (pick your own cheese). Next, i put them back into the oven until the cheese melted and then turned on the broiler just long enough to cook the cheese to golden brown. Topped them with a good dollop of your favorite salsa and some chopped cilantro and enjoy! P.S. An avocado would have been great with these as well, but the avocados at the store today were all under ripe.
